You will be taken to a renowned Parmigiano‐Reggiano DOP maker. Parmigiano‐Reggiano is entirely bound to its point of origin. Both the production of milk and its change into cheese take place in the region of Parma, Reggio Emilia, Modena, and Bologna to the west of the Reno River and Mantua to the east of the Po River. The mystery of such goodness starts in the place of origin, in the natural feed, and in the fantastic milk with no additives.
Then you will visit a Prosciutto DOP maker. One of the earliest references to ham creation in the region appeared about 100 BC back in the works of Cato, who depicted the act of burying pork legs in barrels loaded with salt. The meat will then be dried and smoked. As the process towards the making of air‐cured Prosciutto is refined, the smoking stride will be ended.
